I am always looking for different ways to make breakfast easier in the morning. Waking up at 5:30AM to get ready for the day, and then waking up Logan to be out the door around 6:40AM, doesn’t leave a lot of time to have something to eat. I used to not eat breakfast at all, but after realizing how bad that is for my metabolism and, as a result, my desire to binge eat later in the day, I knew I had to get breakfast in! Now my typical breakfast is Shakeology. It is easy, full of nutrients and super foods, and keeps me full.
On the weekends, I like to have a little variety (and drink my Shakeology later in the day). I found this recipe online and changed it up a bit to make it 21 Day Fix friendly! I put it together with only two eggs to begin with, but realized the consistency was too thick. I added two eggs and made it into two servings instead of one.
Here’s the recipe:
INGREDIENTS:
4 eggs
1/4 cup chopped green bell pepper
1/4 cup chopped yellow onion
a handful of spinach, chopped
1/4 cup chopped mushrooms
1/4 cup shredded cheese

21 Day Fix Serving: Since I doubled the eggs and made two servings, it halves the blue and green containers. You can change it up with ingredients you would like. 1/2 green, 1 red, 1 blue
Preheat oven to 400 degrees. Put eggs in bowl and whisk with a fork. Add the veggies and cheese.
Grease muffin pan and fill each container about two-thirds full.
Bake about 15 minutes and remove from oven.
